Random Droid dump

My hubby and I went to Alabama's homecoming on Nov. 19th. That was the first time I have been to a Bama game in almost 20 years!! We had a blast!

Easton has been real big on putting on our shoes and trotting around the house in them alot lately...

A couple of weeks ago my husband sent me roses at work! The note was a little hint that I was getting a Michael Kors watch that I have been wanting sooo bad! Isnt it pretty??

Lastly I made a BBQ Chicken Pizza last weekend! Recipe below:

1 pkg Jiffy pizza crust mix (follow directions on box)

1 bottle of BBQ sauce (i used KC Masterpiece)

2 chicken breasts, boiled, cubed, and seasoned in salt and pepper

2-3 handfuls of grated cheese

Once the dough is mixed and spread out on cookie sheet, bake for 2-3 minutes. Spread BBQ sauce to your liking on dough, then add cubed chicken, and then grated cheese. Bake at 350° until cheese is melted and bubbly!

Homemade Applesauce

My friend Whitney and I decided we wanted to try a new recipe we got off of a blog that we both follow http://www.lovefromtexas.com/.

First we cored, sliced, and peeled 3 lbs. of apples.
The we took a bag of pre-frozen strawberries (thawed) and sliced them up.

We added 1/3 cup brown sugar and 1/2 cup water and let simmer for 25 minutes.

After simmering for 25 minutes pour mixture into blender/ food processor and puree.

We ended up filling 2 -16 oz. plastic freezable jars.

It was SUUUUPPPEEEERRRR yummy!

Easton's 2nd Birthday

For Easton's 2nd Birthday we incorporated football and Mickey Mouse, two of his favorite things. :)
I found out how to make these really cute Mickey Mouse cookies online, and they were a hit!

Every year the weekend after his birthday (which is when we would schedule a party for) Alabama and Arkansas play. This year is just so happend to fall into our theme and we were able to have the game on, so needless to say all of the men were happy! ;)
Chowin' down!

Cupcake time!

Mommy and Easton...I hardly have any pictures of us...I'm usually the one behind the camera, so I love this picture! I just wish he would've given the juice a break long enough to smile... but beggars can't be choosers.
Sweet family picture...decked out in our Bama gear!

Easton's first beach trip

This little booger had to have been a fish in his last life, because he absolutely LOVES the water! I really hate Charlie didn't get to go with us, since this was a girls/kids trip, but he had a fun boys night at home.

I was a little anxious and in panic mode because I haven't been to the beach since my late teens much less with an entergetic toddler. It all went okay, but there was no napping while laying out. I was in full lifeguard mode just incase:)

Wasn't the beach beautiful?!?

He is getting so big so quick! I am glad we got to enjoy such a beautiful weekend at the beach! But next time we're taking daddy!

Cajun Shrimp Pasta

I found this picture off Google, but it looks close to this :)

1/2 pound frozen shrimp ( I use a bag from WalMart that are peeled, de-veined, and tails off)
1/4 cup butter
2 cloves minced garlic
1-3 tablespoons flour
Cajun Seasoning
Grated Parmesean cheese
1 16 oz carton heavy cream

Melt butter in skillet and add garlic. Cook the garlic until it is golden brown and then add one tablespoon flour to the butter mixture to make a roux. It needs to be an oatmeal consistantcy so if it needs to be thicker add a little more flour. Remove from heat and set aside.

Add the frozen shrimp to the roux mixture and let them "hang out" until the next step.

In a small saucepan heat heavy cream until just about to boil. Remove from heat and add to roux/shrimp mixture. Wisk until all lumps are gone. Add parmesean to mixture to your liking (I usually use about a palm full. Next add your cajun seasoning to your liking as well. This way you can adjust the "heat" of the dish to your family's liking. This will be an alfredo sauce consistancy. Heat for a few minutes to make sure those shrimp cook through. I serve this over any kind of noodles that I have in the cabinet and enjoy.

Also you can tweek it to your liking... instead of using shrimp sometimes I heat chicken breast chunks, onions, and mushrooms in a small skillet then add to my mixture. It's good either way:)

This is not a dish to try when you are watching your calories... This is one of those meals to eat every blue moon...but it's soooooo worth it!!

My hubby likes for me to cut french bread slices at an angle (He's says it tastes better that way HA!) but I butter it and sprinkle garlic salt and bake until toasty. See what I mean about not watching the calories. This dish oozes a buttery goodness!

Mothers Day

Well I received my Mothers Day gift a few days in advance:) Easton got me the oh-so-fabulous fleur de lis dishes!! He was trying to help me unload the dishwasher last week and dropped on of our dinner plates. My heart sank because that only left me with 3 dinner plates. I couldnt bare to think about over the years all of them breaking due to little things here and there. We got those dishes when we got married:) So I saw these at WalMart by Better Homes & Gardens and fell in love. What a sweet boy huh? Now I can be in style when Im eating!

Okay, I feel so.....

DENSE! Ha! I just logged into Blogger and just so happened to click on the comments link and I had 2 comments back from 2010. I guess I thought it would show that I had comments waiting to be read. You learn something new everyday:) So now I know that there isn't a little Blogger fairy that pops out of the computer, taps on your shoulder, and tells you that you have comments waiting:) I only had 2 comments but they sure did make my day!!

Prayer Needed in Alabama

This is the horrific tornado that ripped through the south on Wednesday. The fatality count is 128 as of this morning and an unknown number of people trapped in vehicles and collapsed buildings. In Alabama we get bad weather, but when something like a tornado (F5 at that) comes through and effects people that you know personally it is heartbreaking! I thank God so much for keeping my family and friends safe. Please pray for those who lost loved ones yesterday in the storms and also those effected by the storms.
