Well, yesterday was boring up until I got off work. But dinner was anything but boring! I am an Italian chick who loves Mexican food, I also love to cook so I whipped up an amazing dinner for the special occasion! I heated up some chicken and cheese taquitos and made some Nacho dip...it is OMG good! It was too good not to share, so here ya go, try some!
( I ended up making half of this recipe because it makes alot)
Nacho Dip:
2 lbs. ground beef
2 packages taco seasoning
12 oz. tomato sauce
2 cups salsa
1 8 oz. package cream cheese
1 8 oz. sour cream
1/2 cup mayo
12 oz. mozzarella cheese
Preheat oven between 325 to 350 degrees. Cook beef and drain. Combine beef, taco seasoning, tomato sauce, and salsa and put in a 9 x 13 baking dish. Combine softened cream cheese, sour cream, and mayo and put on top of meat mixture. Grated cheese goes on top. Bake until cheese has melted, approximately 30 minutes. I find it does better to cover with foil for the first 20 minutes or so.
Are you drooling yet?? If you don't like mayo, don't worry at all, you cannot taste it, I think it is just to make the dip creamier:)

I'd like to nominate my husband for Hubby of the Year!
I was so excited to see my husband walk in the house last night with a Wii in his hands!! I have been wanting one after hearing the ladies at work talk about how much fun it was! Also, I have been looking for a fun way to lose weight, since my baby is now 6 months old, it's about time to start shedding the pounds!! Along with the Wii he bought Jenny McCarthy's "Your Shape" for me! I really enjoyed it and I could definately feel the burn!I REALLY liked how you could make your own calendar as to what days that you want to workout and for how long too! Also while you are working out it tells you how may calories you have burned!! Maybe I will see results in a few weeks like it says that I will!
Also for mine and my husband's 2 year anniversary on March 15th he gave me a Cricut!! YAY!! I have been "crafty" for a while now and he thought I could put it to good use!
How wonderful do I have it? I didn't even ask for either one of these things I just had mentioned that I liked them, and voila they are mine!! I AM SO LUCKY!

Frustrated!!
I don't have any idea of how people do it who live in these weather conditions all the time!! Okay, in Alabama it is so rare to get snow....so you would think that when we get a Winter WARNING and snow is falling like crazy and predictions of up to 8 inches, that they would cancel work! NOPE...here I am at work listening to everyone talk about how horrible the road conditions are getting! This makes SOOOO much sense, lets have eveyone come in and then send them home if things get worse...I must be dedicated to my job, b/c I have put myself in dangerous road conditions to get here and then go back home. Cross your fingers that I get back home in one peice!!

Tacky Dining Room Light
BEFOREI would like to thank the previous owners of my house for leaving me a tacky light fixture in the dining room, because it gave me something to do Sunday whenever I got bored. I am no electrician, so you can imagine my confusion whenever I attempted to take it down from the ceiling...So....I ended up leaving it hanging and lined the floor with newspaper to catch the flying paint particles, and I taped newspaper on the ceiling so that my white ceiling wouldn't turn black. Sounds like a new "you might be a redneck" joke...You might be a redneck if you leave up your chandeleir and spray paint it, instead of taking it down. Isn't it amazing what a can of spray paint can fix??!!

When it Rains it Pours
I tell you, it just seems to be whenever bad news comes our way that it comes in tsunami size waves!! I received our electric bill the other day and to my surprise it was $499.51!! That is a $260.00 increase from the last month! I have called out there too see if they would come to check our meter, incase there is a problem with it, but of course I was told to read my meter everyday at the same time each day and call her back in 5 days and by hearing what kilowatts we use daily she could tell us if there was a problem with it... I guess I was just under the impression that our tax dollars and fees that we pay to this company monthly was to pay our bill, and to service their customers when they need their help, but I guess not, it sounds like it is paying them to just sit on their tails and tick off their customers.
Also, my husband truck is messing up once again, and apparently he needs a new radiator! The estimate was around $450.00 parts, labor, and all...but goodness gracious! I must not have found this money tree that is planted in our backyard. A tax refund couldn't come soon enough:(, but I guess I will just have to wait it out for just a few more months.
On a better note, I am SUPER excited about the National Championship game tonight!! ROLLLLLLLLLLLL TIIIIIIDDDDEEEEEEEEEEE ROLLLLLLLLLLLLLLLLLLL!!!!!!!!!
Did you catch that I am a HUGE Bama fan? :)
