Stars and Stripes!

Well we had an eventful 4th to say the least! We woke up and my husband and I both had messages on our phones that Mason, my stepson, had been admitted to the ER early Sunday morning with a fever of 103 and horrible stomach pains. First thing that came to my mind was that he probably ate some undercooked or bad chicken, b/c I swear that's all the boy eats! I kid with him all the time that at any moment he is going to grow feathers and cluck like a chicken:) (my mom used to say the same thing to me) Well the doctor claimed that at first he thought it was appendicitis, but it wasn't... apparently he had/has some infection in his body, but after 2 IV bags of meds, a prescription of antibiotics for 60 days, and 2 chicken nuggets (see...I really wasn't kidding about the chicken) he was free to go home. The rest of the day was pretty low-key, we just grilled out at my husband's grandparents and visited while Mason rested. We are going to shoot fireworks on Wednesday night so he wont miss out. It is all of our favorite holiday of the year!

Dishes!

This is my first time posting my link for Kelly's SUYL Fridays! I am like Kelly in that I didn't register for fine china whenever I got married, just because i don't think I would have EVER used it. My everyday dishes that we got were by Mandy Bagwell . M bagwell is a graduate of Auburn University. Let's hear it for those southern girls!! Cinco De Mayo
Well, yesterday was boring up until I got off work. But dinner was anything but boring! I am an Italian chick who loves Mexican food, I also love to cook so I whipped up an amazing dinner for the special occasion! I heated up some chicken and cheese taquitos and made some Nacho dip...it is OMG good! It was too good not to share, so here ya go, try some!
( I ended up making half of this recipe because it makes alot)
Nacho Dip:
2 lbs. ground beef
2 packages taco seasoning
12 oz. tomato sauce
2 cups salsa
1 8 oz. package cream cheese
1 8 oz. sour cream
1/2 cup mayo
12 oz. mozzarella cheese
Preheat oven between 325 to 350 degrees. Cook beef and drain. Combine beef, taco seasoning, tomato sauce, and salsa and put in a 9 x 13 baking dish. Combine softened cream cheese, sour cream, and mayo and put on top of meat mixture. Grated cheese goes on top. Bake until cheese has melted, approximately 30 minutes. I find it does better to cover with foil for the first 20 minutes or so.
Are you drooling yet?? If you don't like mayo, don't worry at all, you cannot taste it, I think it is just to make the dip creamier:)

I'd like to nominate my husband for Hubby of the Year!
I was so excited to see my husband walk in the house last night with a Wii in his hands!! I have been wanting one after hearing the ladies at work talk about how much fun it was! Also, I have been looking for a fun way to lose weight, since my baby is now 6 months old, it's about time to start shedding the pounds!! Along with the Wii he bought Jenny McCarthy's "Your Shape" for me! I really enjoyed it and I could definately feel the burn!I REALLY liked how you could make your own calendar as to what days that you want to workout and for how long too! Also while you are working out it tells you how may calories you have burned!! Maybe I will see results in a few weeks like it says that I will!
Also for mine and my husband's 2 year anniversary on March 15th he gave me a Cricut!! YAY!! I have been "crafty" for a while now and he thought I could put it to good use!
How wonderful do I have it? I didn't even ask for either one of these things I just had mentioned that I liked them, and voila they are mine!! I AM SO LUCKY!
